-4 chicken breasts
-3/4 cup marina sauce
-1 bag uncured turkey pepperoni, such as Applegate
-1 cup mozzarella cheese, shredded
-1 tsp Italian seasoning
Salt and pepper to taste
Preheat oven to 375. Split the chicken breast in half to create a pocket. Do not slice all the way through. Sprinkle with salt, pepper, and Italian seasoning. Add a heaping tablespoon of marinara sauce. Add pepperoni slices, cheese and fold the top chicken breast to cover the filling.
Sprinkle the top with more salt, pepper, and seasoning. Add another tablespoons of marinara sauce to cover the entire chicken. Top with remaining mozzarella cheese! Bake for 30 minutes or until chicken is cooked through!
