Sun-Dried Tomato Hummus

Hummus is so delicious and good for you! Egyptians eat tons of hummus, but it is common through out the middle east, and north Africa. If you are not familiar with it, it is made by using cooked chickpeas, tahini, lemon juice, garlic, cumin, salt and pepper. Some people like to puree it very smoothly or you can pulse it in the food processor and leave some texture to it. It really is personal preference! It is great as a dip with pita chips, raw veggies, or smothered on a sandwhich. We highly recommend giving it a try.

Don’t be tempted to buy it pre-made at grocery stores, it is THAT easy to make and you can customize it with your favorite flavors! Sun-dried tomatoes, and basil, were an awesome flavor combination. YUM!


2- 14.5 oz cans of chickpeas/garganzo beans, rinsed and drained

1 jar of sun-dried tomatoes, removed from oil

1/2 cup of olive oil

1 cup of fresh basil leaves

2 large lemons

3 heaping tablespoons of tahini (sesame paste)

3 cloves of garlic

3 teaspoons of cumin

salt and pepper to taste

1/4 cup of water, optional


Place all the ingredients except the water in the food processor. Blend until smooth. Add water depending on how you like the texture!
