Poke is the latest craze right now! It is traditionally a Hawaiin dish that is made with chunks of raw tuna that is marinated with soy sauce, sesame oil, and lime/lemon juice. If you have ever been to Hawaii you can find it sold every where from gas stations to fancy restaurants.
Action Bronson showed us his version of poke it is delicious, easy, and full of flavor! It is made by roasting golden beets, which gives it a great earthy flavor! The ginger and soy sauce give it an amazing flavor, and the sugar gives it that perfect hint of sweetness. So good!
2 cups golden beets, diced
1 tablespoon grated ginger
3 tablespoons soy sauce or tamari or coconut aminos
1 tablespoon organic sugar
1 tablespoon sesame oil
1 scallion, sliced
1/2 Maui onion, sliced
1. Preheat the oven to 400 degrees F. Peel and dice the beets into 1-inch cubes. Place on a sheet tray with olive oil, salt and pepper. Bake until tender.
2. Place the freshly grated ginger into a large bowl. Finely slice the scallions and the onion and toss into the bowl. Add the cane sugar, soy sauce, and sesame oil to the bowl and stir to incorporate.
3. Add some lime juice, sesame seeds, and cilantro to liven it up. Adjust the seasoning to your liking. Serve over white rice, brown rice or it is just as delicious eating it solo!
