These little pepper boats are full of flavor! Makes a great appetizer!
-2 cups cooked and diced chicken
-3 oz cream cheese
-2 tblsp onion, diced
-1 tomato, diced
-1 tsp cumin
-1 tsp chili powder
-1 tsp garlic powder
-1/2 teaspoon salt
-1/2 tsp black pepper
-2 Tablespoons Cilantro, finely chopped
-1/2 cup Colby jack cheese
-10-12 mini peppers cut it half, length wise
Preheat oven to 375 degrees. Spray baking dish with non stick cooking spray.
In a large mixing bowl combine all the ingredients together except for the shredded cheese. Make sure to mix very well until everything is combined.
Spoon mixture onto each pepper, top with cheese. Bake for 25-30 min until cheese is melted and peppers are soft. Serve with your favorite spicy salsa!
