Spicy Beef Taquitos

These baked taquitos taste so good! They are filled with lots of cheese goodness, beef and jalapeños for a spicy kick!


3 jalapeños, diced
1 lb lean ground beef, cooked
1 tblsp Chili powder
1 tsp ground cumin
1 tsp onion powder
1 tsp kosher salt
1/2 teaspoon garlic powder
8 ounces cream cheese, softened
3 cups shredded Colby Jack cheese
24 6″ small whole grain or corn tortillas

Heat oven to 400°F. Line 2 baking sheets with aluminum foil and lightly coat with cooking spray. Set aside.

In a large bowl, combine cooked ground beef, all seasonings, jalapeños, cream cheese and shredded cheese.  Tip: Add 1/4th cup water if mixture needs a little moisture.

Lay out tortilla and fill with 1-2 tablespoons filling. Roll the taquito tightly without tearing the tortilla.  Place taquitos seam side down on the baking sheet.  Repeat until the baking sheet is full, being careful not to allow the taquitos to touch.  If the taquitos are unrolling or tearing.

Bake 15 minutes until the tortillas are crisp or the ends begin to brown.
