This chicken is flavorful, moist, and so easy to make! Serve with a side of beans, and brown rice for a perfect dinner!
2 chicken breasts, boneless and
2 tblsp your favorite salsa, strained
2 tblsp canned green chilies, strained and diced
1/3rd cup whole milk Greek yogurt
1 tblsp taco seasoning
1/2 cup Colby jack cheese, shredded, divided
Salt and pepper to taste
Preheat oven to 375. Spray baking pan with non stick cooking spray!
Combine all the ingredients except chicken breast and 1/4 cup of shredded cheese. Mix until everything is combined. Reserve half the sauce.
Place chicken breast on a flat surface and cut slits into them without cutting all the way through. Sprinkle with salt and pepper. Add spoon full Greek yogurt mixture into each slit. Top with shredded cheese. Bake for 30 minutes. Serve with remaining sauce!
