Cashew Chicken Salad

Jazz up some leftover chicken breast with lots of veggies, cashews, and a lemon vinaigrette! Serve over lettuce wedges or your favorite whole grain bread!

Recipe:
2 chicken breasts, cooked and chopped
3/4 cup finely shredded red cabbage, chopped
1/3 cup green onion, chopped
2/3 cup cashews
2/3 cup snap peas, chopped
1/3 cup vinaigrette dressing, recipe below
4 romaine leaves

Directions:

To a large mixing bowl add cooked and chopped chicken, cabbage, onion, cashews, and snap peas and toss together. Drizzle dressing over the top and toss to combine
