Pomegranate Quinoa Breakfast Parfait

Start your day off right with this powerhouse breakfast! Quinoa is an excellent source of carbohydrates, while the greek yogurt gives it that extra boost of protein! Chia and walnuts are great sources of omega 3 fatty acids and give this parfait a great crunch! We can’t forget about pomegranate, which is filled with antioxidants.


-6 oz plain Greek yogurt
-1/2 cup cooked quinoa
-1 tblsp orange juice
-2 tblsp honey
-1 tsp orange zest
-1 tsp vanilla extract
-2 tblsp walnuts, chopped
-1/4 cup fresh pomegranate
-2 tsp chia seeds


In a mixing bow combine the yogurt, quinoa, juice, honey, zest, and vanilla.

Layer the mixture with the remaining ingredients. Makes 2 servings
