Phyllo Stuffed Beef Rolls

Phyllo dough isn’t just for sweets! Makes a delicious savory appetizer as well. Give it a try this way, simple, easy, and delicious!


-1 pound lean ground beef

-1/2 cup onion, diced

-1/2 cup green bell pepper, diced

-1/2 cup red bell pepper, diced

-3 cloves garlic, minced

-1/2 cup Italian parsley, chopped

-1 cup shredded mozzarella cheese

-1/2 cup shredded cheddar cheese

-16-20 sheets organic phyllo dough

-1/2 tsp salt, or more to taste

-1/2 tsp black pepper


Preheat oven to 375. Brush olive oil on a sheet pan.

In a sauté pan over medium high heat, brown the ground beef until no longer pink, add in onion, both bell peppers and let cook for 5 minutes. Add garlic, parsley, salt and pepper, cook for 2 more minutes, remove from heat and let cool.

Transfer cooked beef mixture into a bowl and add the cheeses.

Cut the phyllo dough in half. Brush with olive oil. Take one phyllo strip and begin to make your first roll. Take a spoonful of the meat mixture and place on the short end of phyllo strip (the end closest to you). Roll away from you two times. Fold in the phyllo strip sides all the way, and then continue to roll phyllo toward the other end.

Place on sheet pan and brush the tops with olive oil. Bake for 15-20 minutes, just until golden brown.
