Middle Eastern Poached Eggs (Shakshouka)

If you love poached eggs then this is the recipe for you! Delicious, tomato based sauce, with peppers and onions!

Recipe:

-1/2 cup onion, diced

-1/2 cup green pepper, diced

-2 large ripe tomatoes, diced

-1/2 cup fresh mozzarella cheese, sliced

-2 cloves garlic, minced

-1 tsp paprika

-5-6 large eggs

Salt and pepper to taste

Directions:

In a sauté pan over medium high heat add olive oil, onions, and green pepper, cook until onions are translucent. Add garlic and paprika and stir for another minute. Add tomatoes, salt, and pepper. Once sauce is boiling, reduce heat, cover, and let simmer for 5 minutes. Drop fresh mozzarella around the pan and add eggs. Cover until whites are cooked and the yolks are still runny, about 5 minutes.
